ABSTRACT

In the development of economic globalization today, the international exchange is becoming increasingly frequent, and the cultural exchange, especially the cuisine culture is becoming even close. China's catering industry like other industries is also facing the problem to the world. Sichuan dish is one of the Chinese eight cuisines, which has local and traditional characteristics. Sichuan dish names contain rich local culture and tradition, even, literary quotation of history. For a long time, it is laggard for us to do research on translation of dish names, and it has affected the successful exchange of food culture between China and foreign countries. Under the guidance of Skopos Theory, this thesis mainly explores methods for English translation of Sichuan dish names on the basis of analyzing the characteristics of Sichuan dish names. The study finds that Sichuan dish names can be divided into different categories, mainly including names associated with main raw materials, names associated with the cooking method, the flavor, legend or allusion and names with use of rhetorical devices. Skopos Theory chiefly emphasizes the purpose of translation of the target text. And to convey information, facilitate ordering dishes and disseminate Chinese culture are the chief task of translating Sichuan dish names. In light of the translation purpose and according to the features of Sichuan dish names, literal translation, free translation and transliteration can be employed in translation of Sichuan dish names. And the findings can have the reference value to the translation of Sichuan dish names. What’s more, it is helpful to better intercultural communication.

摘要

在全球化经济发展的今天,我国对外交往活动日益增多,中国的餐饮业同其它行业一样也面临着走向世界这个问题。川菜作为中国八大菜系之一,颇具地方和传统特色,蕴涵了悠久的地方文化和传统乃至历史典故。但长期以来翻译研究相对滞后,影响了中国与外国之间的饮食文化交流通畅。本研究在目的论的理论指导下,在分析川菜菜名的命名特点的基础上,探讨川菜菜名的英译方法。研究发现,川菜菜名主要分为以下几类:和原材料相关、和烹饪方法相关、和味道相关、和传说或历史典故有关以及修辞手段的运用。目的论强调翻译要首要注重目标文本的目的。而传递信息,方便点菜并传播中国文化是川菜菜名翻译的首要任务。在此原则指导下,根据川菜菜名的特点,可以将直译、意译和音译的方法运用到川菜菜名翻译中。这些川菜菜名翻译的具体方法对菜名翻译具有参考价值,有助于更好地跨文化交流。
