摘要

不同国家和民族存在着各具特色的餐饮文化,中国与英美等西方国家对于饮食的观点和态度,餐饮内容及餐饮特点等方面都存在着显著的差异,本文选取西方国家中有代表性的英国来与中国进行比较分析.饮食文化原本就没有疆界.中国早在汉朝时就有胡使,就有西餐,就有外来的饮食文化.在近一两百年中,中国的餐饮也发展到了全世界.尤其近年来中西餐饮文化交流日盛。揭示中西餐饮文化差异及内在的原因,有助于中国餐饮文化在继承自身传统的同时,融合吸收外来精华,达到创新、超越,创造新的餐饮文化。总的说来,中国饮食文化历史悠久,在全球得到认可.但是,历史的久远,历史的富有,并不能掩饰中餐的不足.西餐餐饮文化具有一定的科学性和营养性.问题就在于究竟是具有西方个人主义色彩文化的西餐更有优势,还是带有浓厚中国文化特色的讲求大一统的中国饮食更有优势.当然两种餐饮文化都各有所长,中餐重视的是亲情,气氛,营养,形式;西餐更多重视的是效率,卫生,自由平等.近年来中西餐饮文化交流日盛,揭示中西餐饮文化差异及内在的原因,有助于中国餐饮文化在继承自身餐饮文化,融合,创新,超越西方餐饮文化上大做文章,利用与西方餐饮的差异继续发展,吸收并与之相结合,创造新的餐饮文化.

ABSTRACT

Different countries and  nationalities have various characteristics in the dining culture. The western countries such as America and British have remarkable difference from China regarding the concept and attitude as well as the content and characters of food. The diet culture originally does not have the border. China, as early as Han Dynasty, had Hu cuisine and the western-style food. In the last century, Chinese cuisine also developed into the world. Especially in recent years, China and the Western countries have exchanged with each other in food culture , and also discover the differences and inner reasons about the dining culture between China and western countries. It was also helpful to see that the Chinese food culture inherit its own culture and be enhanced through the combination, innovation and finally surpass that of western countries, it is also conducive to create new culture through making use of the western dining culture and the combination with western style. Generally, Chinese food culture has a long history in the global recognition. However, the history of the long, rich history and can not cover up the demerit of Chinese food. Western food culture has a certain degree of scientific quality and nutrition. What is the problem lying with the western culture? Which food culture has more advantages: the western individualistic food culture or its counterpart with with strong Chinese cultural characteristics. Of course two catering culture, Chinese food culture is associated with each family, atmosphere, nutrition, form, Western is more with efficiency, health, freedom and equality. In recent years, with more and more exchanges in food culture , people have a better understanding of their own food culture. Through innovation, absorption and continued development , we will create a new food culture.
