摘要

粤菜以其独特的风味和地方特色享誉全球。粤菜已经成为了南方菜的主要代表,并且不断吸引着其他省份和国家的人。自从改革开放以来中国加速了全球化的步伐,这个成果在广东这样发达的省份尤为明显。基于广东的飞速发展,广东目睹了一系列的大型事件。于是一些外国友人开始了对广东和广东文化的了解之旅。在旅途之中,外国友人对美味的粤菜更是赞不绝口。 粤菜菜名作为一种沟通渠道,它通过文字向食客传递广东饮食习惯和文化信息,在粤文化及中国传统文化对外交流中具有一定的重要性。 因此, 粤菜菜单的正确翻译能够进一步弘扬广东独具魅力的饮食文化,促进粤文化与国外文化的交流与发展。在然而在翻译的过程中,对菜名的不恰当翻译可能会导致误解。本文通过对影响粤菜菜单英译的因素进行分析,探讨了当前常用的几种菜单翻译方法藉此提高翻译质量,起到跨文化交流的效果。

Abstract

 Cantonese cuisine, with its unique flavor and local characteristic, enjoys an incredible reputation around the world. It has become the representative of culture of the south cuisine and attracted an increasing number of people from other provinces and countries. After the reform and opening-up policy, China accelerated its step to globalization. This is especially typical in some developed provinces like Guangdong. A large number of large-scale events are held in Guangdong for the unbelievable development speed of China. Our foreign friends begin their trips to know and learn about Guangdong and its culture. The delicious Cantonese cuisine gains numerous compliments from our foreign friends. The names of Cantonese cuisines, as a way of communication, spread culture connotation and eating habits. Therefore, it is crucial to translate the Cantonese cuisine properly. In this way, the profound Chinese culture behind the cuisine can have a chance to exchange with other cultures. In the translation process of cuisine names, some improper translation could lead to misunderstanding among different cultures. Upon this point, some difficulties in English translation of Cantonese Cuisine and useful translation methods will be discussed and analyzed in this paper to improve the translation quality.
