摘要

中国是一个饮食大国,饮食文化源远流长。随着全球化的发展,中国美食已遍布全世界。正如我们所知,食物是人们生活的基础和能量的来源。现今,中国人越来越重视吃,不仅要吃得健康,而且要吃得满意。并且随着生活水平的提高和国家政策的对外开放,越来越多的外国友人到中国来参观和发展,体验中国的文化风俗,因此,一份准确无误的中餐英译菜单对每个餐馆来说是无比重要的。菜单的翻译直接影响着外国友人对于中餐文化的理解,一份低质量的菜单英译将很可能造成误解和文化的缺失。本文是从翻译理论目的论的视角,对嘉兴餐馆菜单上的英译进行研究和评估,分析其出现的问题和不足,总结并归纳菜单翻译的原则、策略和技巧。

Abstract

China is a big country of diet, which has a long history of cuisine culture. With the progression of globalization, Chinese food is found all over the world. As we all know, food is the basic need of people and the source of energy. Nowadays, Chinese people pay more attention to eating, they not only want to eat food, but also enjoy food. What’s more, with the improvement of living standards and opening to the outside, more and more foreigners come to China to enjoy Chinese Culture and Custom. So, an accurate and elegant translation of Chinese menus play a significant role to any restaurant. The translation of menu has directly influenced foreigners’ understanding for cuisine culture, and low-quality version will be likely to give rise to misunderstandings and loss of cultural elements. From the perspective of Skopos theory, this paper studies and evaluates a number of typical dish names from many restaurants of Jiaxing, attempts to analyze the problems on the menu, and summarize the principles, strategies and techniques of menu translation at last.
